This Banana Bread Recipe is great for snacks on the run for anyone, but especially for people affected by Crohns or Colitis.
- 4 cups almond meal
- ¾ cup chopped fresh walnuts
- 1 teaspoon baking soda
- ½ teaspoon sea salt
- 3 eggs
- ½ cup honey
- ¼ cup melted unsalted butter
- 1 teaspoon lemon juice
- 3 large ripe bananas
Preheat oven to 325 degrees F in a convection oven
Mix dry ingredients together
In a separate bowl whisk eggs until fluffy
Melt butter with honey in the microwave until just melted
Mash bananas
Mix egg, butter, honey, lemon juice, and bananas together
Make a well in dry ingredients and add wet ingredients and mjx together lightly. Do not over mix!
Grease pans with butter and fill ¾ full
Makes 8 small loaves cooked for 40 minutes or 1 large loaf for 1 ¼ hours
Cool on cooling racks
